Dees Koffiebranders is a micro-roastery in the heart of Bruges, built around the line “building communities through coffee”. It began as a small roasting project and has grown into a roastery and bar that combines roasting, hospitality and education. The team visits origins whenever it can and buys traceable coffees through close relationships with farmers and trusted importers, then roasts them in small batches in Bruges.
At the bar and shop, Dees brews its own beans and sells bags to take home. The bar is meant as a place to sit down and slow down, and the team will pull an espresso twice if that is what it takes to get it right. It looks for new discoveries, from experimental co-ferments to rare varieties.
The beans are split into a Core Selection, with the darker-roasted Colombian Yana Misi, the Brazilian Fazenda Matão, the Bruges Blend of the two for fully automatic machines and a CO2 decaf; a Seasonal Selection; and an Experimental Selection that includes a Liberica and Excelsa lot from Vietnam. Dees also roasts for cafés, restaurants, hotels and offices, with equipment advice, grinder adjustments, workshops and training.
