Mellow Coffee Roasters is a Dutch roastery run by four friends, Vicky, Michael, Andy and Min, who came to coffee from law, medicine, economics and media. They grew up with the flavours of Asian coffee and started Mellow to show that Asian origins, which in Europe often carry a reputation they do not deserve, are full of nuance, depth and character. The range also takes in coffees from Colombia, Ethiopia, Kenya, Peru and Panama, and the team promises “no coffee snobbery here”.

Mellow roasts on demand, on ROEST P3000 and L100 roasters, and each coffee comes with its roast profile and its aroma, flavour, aftertaste and mouthfeel. The shop is split into four collections: Mellow Daily, Mellow Experimental, Mellow Gem and Mellow Competition. Online orders can also be collected at Fufu Coffee Studio, Mellow’s sister coffee bar in Utrecht.

The Asian side of the shelf includes a washed geisha from Royal Bean Geisha Estate in Alishan, Taiwan, and an anaerobic natural Catimor from TianYu Estate in Yunnan. The Mellow Signature Blend, its first blend, puts a honey-processed Catimor from China with natural coffees from Ethiopia and Guatemala.
