Fritz’s three words are “bread and coffee” (빵과 커피). Its bakery-cafés are numbered in the order they opened. The first is in Dohwa, in Mapo-gu, behind a gate under a tiled roof. The others are in Wonseo, Yangjae, Dongnimmun and Jangchung in Seoul, and in Seongsan on Jeju. Bakers and baristas make up most of the team, alongside wholesale, design and photography staff.

Fritz buys its coffee through direct trade and roasts its own single origins and espresso blends. The blends start from one idea, “coffee is fruit” (커피는 과일입니다), and are built on the bright acidity and clean sweetness of the coffee, with one bittersweet blend of heavier body. They are produced under HACCP food-safety certification. Fritz also supplies cafés wholesale and runs a coffee subscription, the Coffee Club.

For coffee professionals, Fritz teaches an eight-session cupping class, from the purpose and language of cupping through score sheets, varieties, traditional and new processing methods and triangulation practice, followed by a monthly themed cupping and quarterly seminars. Its customers have their own club, the Fritz Community Moim, whose members introduce themselves under seal nicknames, after the seal holding a coffee bean on the Fritz logo.
