Kolonel is run by Kobe and Femke. They opened their first coffee bar in 2010, wanting a place where good coffee, good food and good people came together, began roasting their own coffee in 2016 and opened a second bar, Kolonel North, in 2019. Its motto is “Kolonel, coffee handled with care”.
The roastery works in small batches on an IMF 15 kg roaster, which Kolonel chose as a more environmentally responsible machine, and roasts for its own bars, its webshop and the cafés, restaurants and offices it supplies. Kolonel buys small lots and works with partners it keeps for the long term. The range mixes single origins, several of them roasted separately for espresso and for filter, with the Kolonel Blend served in both bars, a seasonal blend of two organic coffees called Paramount, and a sugar-cane decaf from Colombia. Businesses can also get help choosing machines and grinders from La Marzocco, Mahlkönig, Eureka and Ascaso.
Kolonel South is south of the centre and Kolonel North is on the Eilandje, by the old docks. Both serve coffee, breakfast and lunch, take table reservations and sell gift vouchers. In the old centre, Kasette Koffie also pours Kolonel’s coffee.
