Gráft was “created & developed by baristas”, and it is run by Hannah and Lúcás. Grá is the Irish word for love, and Gráft signs off with “Grá Mór”. It turned two in September 2026, and its shop, team and community have grown since it opened.

The pour-over menu changes with the coffee on the bar. Calendar Coffee’s natural Rwanda Bourbon, which the roaster describes with notes of orange, baking spices and salted caramel, was the first coffee roasted in Galway on its bar. Ground State Coffee’s Pink Bourbon from Colombia, co-fermented with watermelon after carbonic maceration and a honey process, was “probably the funkiest and coolest coffee” Gráft has had on its bar. The team is always experimenting with brews and recipes.

The café is pet friendly and opens early for people who start their day early. In the evenings it hosts Gaeilge Café, an Irish-language class for beginners run with Clann & Co. Social Club.
