Loste takes its name from its two owners, LOrenzo and STEfano. Stefano Ferraro, born in Turin, cooked in London for Joël Robuchon and Gordon Ramsay, then in Hong Kong, Tokyo, Dubai and Sydney, and was head pastry chef at Noma in Copenhagen for nearly five years. Lorenzo Cioli, from Tuscany, was head sommelier at The Square in London and moved to Copenhagen in 2015 to work at Noma, where the two met; a later spell at Restaurant 108, where he met Tim Wendelboe, turned him towards coffee. Their proposal is to raise the idea of the Italian bar: specialty coffee with international pastries and a select lunch menu.

The pastries are baked fresh every morning and change often, from pain au chocolat, cinnamon rolls and a cardamom croissant with coffee glaze to savoury focaccias and an egg and cheese bun. Lunch is served at the two full cafés, one of which adds weekend brunch, and the third site near Centrale station is a weekday breakfast counter for takeaway. The cafés take no reservations and are walk-in only. Loste holds master classes in its pastry and coffee, and the group has opened a sister bakery and café in Kyoto, Stelo Café.

Loste does not roast. The coffee menu is espresso drinks with cow’s or oat milk and a filter coffee, and the café asks customers to drink the coffee without sugar to respect its flavour. The coffee is roasted by April Coffee Roasters.
