Artificer is a specialty coffee bar and roastery in Surry Hills, run by Shoji and Dan. It specialises in the procurement of delicious coffee and focuses on the correlation between selection, roasting and brewing that best represents each coffee’s qualities.
Artificer goes through around fifty to sixty different coffees a year and one bag is Shoji’s choice of single origin. It rests its coffee for three to four weeks before using it on the bar, and a bag from the previous Friday’s roast is intentional: “super fresh isn’t best, some rest is best”.
The Seasonal Blend is built on Colombia Matambo AA, a relationship that has lasted more than eleven years, currently paired with a washed Nicaraguan lot. Each single origin comes with the farm owner, region, altitude, variety and process. Drip bags, cascara from its Bolivian producers and an AeroPress sit alongside the bags. The current retail range is listed below with the roaster’s own tasting notes.
