Boo Coffee Roasters is an independent roastery in Anderlecht, Brussels, run by Benjamin Brassart and Benoit. Benjamin came to specialty coffee in Brussels in 2018, during barista training in Brussels, then worked as a barista in several Brussels coffee shops before learning to roast and becoming a head roaster and head barista. Benoit first worked in specialty coffee at a shop in a mall in Australia, kept working in coffee shops in New Zealand and Canada, and settled in Brussels in 2022. The two met working at the same café, first talked about a roastery on a trip to World of Coffee 2023 in Athens, and opened Boo in 2024.
Benoit won the Belgian AeroPress Championship in 2024. Benjamin won the first SCA-sanctioned Belgian Roasting Championship in 2025, and in June 2026 he won the World Coffee Roasting Championship at World of Coffee Brussels, the first Belgian to hold the title.
Boo buys from a network of producers and importers that share its standards on quality and fairness: “We don’t source broadly. We source deliberately.” The range is split into Daily, the everyday coffees, Seasonal, single origins that change with the harvests, and Extra, its limited releases. Each coffee is roasted for filter or espresso, and the Colombian decaf is an omni roast. Boo ships across Belgium and Europe and supplies cafés, restaurants and retailers wholesale.
