Söderberg is a Scandinavian bakery, passionate about sourdough bread and traditional Swedish baking. It runs seven coffee shops in Edinburgh and two in London, open all day for coffee, buns and cake and for breakfast, brunch and lunch: filled sourdough baguettes, toasties and open sandwiches. Two bakeries supply them, one above the Pavilion café in Edinburgh and one in East Dulwich. They bake a core of Swedish classics every day, cinnamon and cardamom buns, kladdkaka, mazarins, pistachio horseshoes and chocolate balls, with semla buns and saffron buns in season.

In Edinburgh the cafés are at the Meadows, in Stockbridge and in Morningside, with bakery shops at Quartermile, in Broughton and in the West End. The Pavilion, the flagship at Quartermile, sits directly beneath the bakery and has a brunch menu, an evening menu and a drinks list; with East Dulwich it is one of the two sites serving the Swedish meatball brunch, Scandi-style waffles and sourdough pizza. Live jazz plays there on Sunday evenings. Most sites are dog friendly. The bakery runs hands-on cinnamon bun masterclasses, with a welcome drink, a meal while the buns bake and a batch to take home, and the cafés can be hired for private events and catering.

The coffee is Söderberg’s own recipe, roasted by Obadiah in Edinburgh. The two teams spent several months developing an exclusive house espresso, a Scandinavian roast with familiar notes of caramel and chocolate, “just the way we like it”, and the bag is sold to take home in its shops and online. Flour comes from Shipton Mill, founded by Söderberg’s majority shareholder John Lister, and the smoked salmon for the open sandwiches from Belhaven Smokery in Dunbar. Söderberg does not roast; its house espresso is roasted for it by Obadiah.
