Saftig Kaffe is a nano-roastery started in Copenhagen in 2024 by two coffee geeks, Jonas and Magnus. It grew a little bigger and, in the summer of 2025, opened a small, living room-esque espresso and brew bar in the heart of Nørrebro, where the two keep roasting, brewing and flipping vinyl records. Its tagline is “juiciest of them all”.
The roastery works with expressive light roasts driven by farmers’ creative craft and skills, and it gets excited about fermentation and origin: unique micro-lots and signature processing methods. When farmers put incredible work into their coffees, Saftig wants that value to find its way back to them. Several lots come from returning relationships, among them a third harvest from the Dukamo family in Sidama and a second from the brothers Hertson and Jesus Bernal in Huila. There is also a low-caffeine coffee from Daterra in Brazil, made from the Aramosa and Laurina varieties, which are genetically low in caffeine, so the lot is not decaffeinated.
Most coffees are roasted for espresso, filter and everything in between, with two lots sold for espresso. At the bar, filter is brewed on the Orea O1, a compact flat-bottom brewer that the shop also sells. Saftig supplies cafés with coffee for the bar and retail bags for the shelf, and helps them with brewing setups and workflows. Kaf, the plant-based bakery in Nørrebro, serves it.
