Coffee Collective has been owned by its founders, Peter N. Dupont, Casper Engel Rasmussen and Klaus Thomsen, since 2007. Klaus, a World Barista Champion, heads coffee shop quality, and Casper runs the roastery. Rebecca Vang joined as CEO after seventeen years of founder leadership. The company trades directly with coffee farmers and pays prices far above market level, and all of its wholesale coffee is directly traded.

Coffee is roasted daily at the Frederiksberg headquarters, a former machine factory that holds the roastery, the office, a training space and a café. From the café, guests can see straight into the roastery and watch the roasting through the day, and courses run in the top-floor office.

The other coffee shops each have their own design. Torvehallerne sits in the food market, at a bar built by Garde Hvalsø in elm and granite with a map of the coffees’ origins on the back wall. Bernikow, in the centre, occupies a former tavern with a glass-covered courtyard. Carlsberg Byen has six-metre windows, and its furniture is made from Dinesen surplus wood and designed to be taken apart and reused. Sankt Hans Torv in Nørrebro has clay walls and 100-year-old Flensburg bricks. The first shop has moved to a larger space in Nørrebro, Trianglen faces the park in Østerbro, and the Aarhus shop in the Latin Quarter has a small training space for courses.

Collective Bakery opened in Nørrebro in 2021. It bakes pastries daily for all the coffee shops and sells bread and cakes from its front shop, with ingredients from suppliers such as Kornby Mølle and Friis Holm.
