Colombian-born Steven Sutton launched Devoción in 2006 to produce the freshest coffee he could. The company does everything short of picking the cherry: its buying team, based in Colombia, visits farms year-round and buys only coffee in active harvest, which is dry-milled at Devoción’s facility in Bogotá and flown to its roastery in Brooklyn. No importers or warehouses sit in between, and a coffee can go from origin to the cup in ten days. The house blends come from farms around Colombia all year, and Limited Edition coffees are single-estate microlots chosen for their varieties and processing. An Impact Fund, fed by 1% of every retail bag, backs women coffee producers, the environment and young people: by September 2026 it had supported 69 women producers, planted 1,011 native trees and trained 43 young people.
The six cafés in New York share a theme of Colombian landscapes and plants. The Williamsburg flagship takes its pitched roof, skylight, sunlit courtyard and woodwork from traditional Colombian coffee farms, and is reached through an exposed-brick corridor. Its coffee laboratory, visible from the street, holds trainings, cuppings, tastings and public classes in espresso, latte art and pour-over. In Downtown Brooklyn, where Boerum Hill begins, windows 18 feet tall light an indoor garden of more than 35 species, from mango and ficus trees to fishtail palms, over handmade Colombian cement tiles. The Dumbo café has 20-foot ceilings and three 16-foot planters of Colombian pine from naturally fallen trees, hung on steel chains.
In Manhattan, the NoMad café sits in a Beaux-Arts building with 14-foot ceilings, finished in wood, concrete, Carrara marble and bronze. The Flatiron café occupies a landmarked former artist’s studio, with a skylight over the bar and a chandelier turned into a living plant installation. In Midtown, a steel column covered in tropical plants, inspired by Medellín’s corten steel sculptures and the New York Botanical Garden’s glasshouse, stands at the centre of the room. The cafés serve espresso drinks, draft and nitro cold brew and aromáticas, herbal infusions made with fruit.
