Think - Specialty Coffee Shop & Roaster in New York

Think Coffee is a coffee importer and roaster that has called New York home for 20 years. Its flagship café sits on the NYU campus in Greenwich Village, with the kitchen at the back where the bread for every café is baked fresh each day, and there are ten cafés in Manhattan in all: Tribeca, Gramercy, the Flatiron District, Union Square, Bleecker, the Meatpacking District, Hudson Yards, NoMad, Mercer and SoHo, where a hand-painted mural by the artist Katie Merz covers the wall. The eleventh, in Williamsburg, Brooklyn, is the roastery, bakery and café where new pastries are developed. The Union Square café keeps a community bookcase and rotating local art; the Meatpacking café has wood floors from the old Coney Island boardwalk.

Think’s mission is a coffee supply chain measured not only by the prices paid to producers but by whether farmworker communities thrive. Direct trade, it argues, does not by itself ensure that the people doing the work on the farm share in the value, so it goes beyond the purchase to check what farmworkers earn. It buys through relationships that are in some cases more than a decade old: with Jaime Lovo at Finca Santa Isabel and Jorge Lagos at Finca Santa Teresa in Nicaragua since 2013, with Aklilu Kassa and now his son Biniyam at Kellensoo in Ethiopia since 2013, with José Gómez and Karen Mora in Nariño, Colombia, since 2016, and since 2025 with Nelson Ramírez at Finca Chely in Honduras. Alongside the buying it runs projects at origin: reusable menstrual kits for girls’ education in Ethiopia, worker housing renovations and rebuilt homes in Nicaragua, and enclosed water wells in Totogalpa.

The signature blend, Devoe, is served on drip and espresso in every café, and the blends take their names from the streets of Williamsburg: Devoe, Ainslie, Lorimer and Metropolitan. Roaster George Hoefer chooses the rotating selection sent to subscribers, and the cafés also deliver coffee and food to offices.
