In Valencian a cortado is a tallat, and one of the city’s roasters took the word for its name. Among these coffee shops in Valencia, four roast their own coffee: Bluebell, which opened in Russafa in 2014, Café Colomer by the Universitat Politècnica, BOSCON in Mestalla and TALLAT in El Cabanyal. The other four buy from roasters elsewhere: Retrogusto, a counter in the Mercado Central since 2015, Blackbird, which pours Right Side from Barcelona, Los Picos, a coffee, sandwich and wine bar, and Let It Bloom, a vegan coffee shop that works with European roasters.
Bluebell Coffee Co, Russafa

The sisters Yolanda and Marian Valero opened Bluebell in Valencia in 2014, began roasting soon afterwards and opened in California in 2023. The coffee is roasted by women, and the sourcing follows the women who grow, pick and process it: Blend Mujeres, the house espresso, gathers the harvests of several women growers in El Dorado, Boyacá, in Colombia, and MBilima comes from a cooperative of 130 women in Gakenke, Rwanda. Each coffee gets its own roast profile. Bluebell Russafa serves espresso, batch brew and seasonal cold brew with a full brunch menu, from chia pudding and apple pancakes to eggs Benedict, and pours Blackbell, a Baltic coffee porter brewed with the Valencia brewery Zeta. The team also teaches courses on coffee regions and processing, with tastings of its own coffees.
BOSCON Coffee Roasters, Mestalla

BOSCON is named after a village of about forty people in Belluno, in the Veneto, and was started in 2022 by Aldo and Leandro, Argentinian cousins of Italian descent who had spent more than a decade in engineering. They roast every week in small batches on a Probat P12, mostly coffees from Latin America and East Africa, some of which return every harvest while others appear once. The range has three lines: Classic for every day, Collection for limited lots and unusual processes such as anaerobic and aerobic fermentations, and a Sugar Cane decaf. Each bag lists origin, producer, variety, process and altitude, with a QR code to the coffee’s story. The Coffee Bar & Brunch serves the coffees as espresso or filter with brunch every day, walk-ins only, and was selected for The Best Coffee Shops Spain 2026. Tasting sessions and V60 workshops run there with Beat Brew Bar.
TALLAT Coffee Roasters, El Cabanyal

TALLAT began as a neighbourhood café in El Cabanyal and now roasts its own coffee in small batches, from producers the team works with closely. Each origin is roasted to keep its own character, for a cup that is clear and balanced as espresso or as filter; the house style is “consistent, honest and clean”. Pastries and croissants come with the coffee.
Café Colomer, Algirós

Lola Colomer opened Café Colomer in March 2021, opposite the Universitat Politècnica, and roasts the coffee herself on a one-kilo Toper roaster from Turkey that stands in the café. She roasts once or twice a week after closing, by hand rather than by software, light to medium and never torrefacto. The current coffees come from Honduras, Brazil, Colombia and Ethiopia, with a Colombian decaf, sold whole or ground to order. The café is also a crêperie, with savoury and sweet crêpes, toasts, teas and traditional horchata, and it holds roasting workshops where each participant roasts coffee to take home.
Retrogusto Coffeemates, Mercado Central
Retrogusto Coffeemates has poured specialty coffee from a counter inside the Mercado Central, the city’s central market, since 2015. There are always two espressos on the bar, each from a different origin, process, profile and roaster, along with a decaf and a filter coffee, and bags for espresso and filter to take home. Its line is “Good coffee. Good people. No rush.”
Blackbird Café, Russafa and the Mercado Central
Blackbird is a café and bakery in Russafa, with a smaller counter, Little Blackbird, by the Mercado Central. The coffee is roasted by Right Side in Barcelona; in spring 2026 the bags to take home were two Kasahun Jabo lots, a washed Héctor Saavedra and a Darwin Moreno. The pastry team bakes for both counters, from butter croissants, cinnamon rolls and bostock to gluten-free financiers and chipá, with monthly specials such as an October pain suisse with hazelnut frangipane and coffee cream. The kitchen adds sandwiches on sourdough, among them a Caesar with roast chicken and bacon.
Los Picos Café, Russafa
Los Picos is “a place for coffee, sandwiches and wine” in Russafa, with a terrace on a small square. Its grinders have held coffee from San Agustín in León and Right Side in Barcelona, with The Fix from Madrid on filter. The kitchen is built around sandwiches, led by a Cuban whose deluxe version swaps the ham for cecina de León, and a grilled cheese with creamy tomato soup that stayed on the menu after a year-end run. Natural wines by the glass change often. There are no reservations, no decaf, no wifi and no gluten-free options.
Let It Bloom, Russafa
Let It Bloom is a fully vegan coffee shop in Russafa run by two co-founders: a barista who placed third at the SCA Spanish Cup Tasters Championship in 2024 and a chef trained in plant-based cooking at Le Cordon Bleu London. The coffee is a selection from European specialty roasters, served as espresso drinks and as V60 pour-over from separate beans for filter. The kitchen serves plant-based brunch all day, the pastries are baked every day, and dogs are welcome.
