Let It Bloom is a fully vegan coffee shop in Russafa, Valencia, a place “where the pause makes sense”. Two co-founders run it: a barista with a background in cupping and bean selection who placed third at the SCA Spanish Cup Tasters Championship in 2024, and a chef trained in Plant-Based Culinary Arts at Le Cordon Bleu London. The food is cooked with seasonal ingredients and made to order.

The coffee is a curated selection from European specialty roasters. The bar serves espresso drinks, the flat white among them, and pour-over filter brewed to order on the V60 from a separate selection of beans for filter. Beside the coffee there are ceremonial matcha, Prana chai, herbal infusions, kombucha and juice squeezed to order.

The kitchen serves brunch through the day: toasts with creative toppings, fresh bowls and indulgent plates. The menu includes a chickpea omelette with sautéed mushrooms and spinach, cherry tomatoes and a mustard sauce; quinoa croquettes whose filling changes with the season; sourdough toast with mashed avocado, pistachio and hazelnut dukkah, rocket, radish and parsley oil; and a granola bowl with coconut yoghurt and seasonal fruit. The pastry counter is baked every day, with croissants, napolitanas, Danish pastries and sponge cakes. Dogs are welcome.
