Mateo González and Carlos Moral met at a coffee and matcha workshop in 2015 and founded Hidden Coffee Roasters on a shared idea: to give value to traceability, sustainability and the work behind each cup. González had discovered matcha in Japan and was already importing it to Spain; Moral comes from a family in the coffee trade since 1979, lived for a year with producers in Nicaragua in 2006, has been an SCA-authorised barista trainer since 2010 and qualified as a Q Grader in 2014. The logo is an Iberian lynx, and every coffee carries an animal’s name.
The first café opened in Les Corts in 2016. El Born followed at the end of 2020, a Girona café ran from 2021 until it closed in 2025, and in 2026 Hidden opened Hidden Sant Gervasi and Granja Hidden in the Eixample, inside the former Granja Vendrell, a century-old dairy that is part of the city’s heritage. Granja Hidden serves a kitchen menu for breakfast and lunch; the Hidden Oasis, on the Barceloneta seafront in collaboration with the W Hotel, serves coffee and matcha by the beach.
The roastery started in a garage in Poblenou, moved from Castelldefels to a Poblenou warehouse in 2019 and settled in January 2024 at the Hidden Headquarters in La Verneda, a building with offices, a training room, a laboratory and production. The company roasts to order on a 30 kg Giesen and sorts its menu into exotic, traditional and funky profiles, each coffee listed with region, process, altitude, screen size, variety, producer and SCA score. Hidden runs an SCA-certified coffee school for its wholesale partners, has judged competitions in Colombia, and travelled to El Salvador and Nicaragua in 2025 to develop the five-coffee Hidden Collection with Andrés Salaverría and the Albir sisters. The current retail range is listed below with the roaster’s own tasting notes.
