Noir roasts its coffees every week in its own Paris atelier and buys them directly from producers. The company, Noir Coffee Shop, was registered in June 2020 with its head office at the Saint-Germain shop in the 7th arrondissement. It has 27 coffee shops in operation, 25 of them in Paris from the Louvre to the Abbesses, plus Neuilly-sur-Seine and the Marché Dauphine in Saint-Ouen, and five openings to come, four in Paris and one in Mayfair, London. Every shop sells the coffees in jars and offers free order collection within twenty-four hours.

The roasting is led by Sander van der Kruijssen, in coffee since 2008 and SCA certified, with Martina Morittu, who joined the atelier in 2024. A lot goes from the importer’s sample through cupping on the SCA protocol, purchase of the quantity needed, weekly roasting on a Loring, which heats mainly by convection with recirculated hot air, then rest and degassing before jarring. Each label carries the batch number, the date and the SCA score, with a QR code to the lot sheet. The jars are amber 200 g pots, returnable and reusable in the shops. The atelier is in the 18th arrondissement.

The same atelier hosts four workshops for the public in small groups: coffee tasting, an introduction to latte art, slow brewing methods and the history of coffee. For companies, Noir runs a pop-up coffee bar with its baristas and the week’s roasts at launches, shoots and weddings, and supplies offices, hotels and restaurants with beans, equipment advice and barista training.
