Terres de Café was founded in Paris in 2009 by Christophe Servell, the son and grandson of roasters, and is a pioneer of specialty coffee in France. Servell sources the coffees himself; the company works with 18 partner farms, 79% of its green coffee is grown in agroforestry and 47% is certified organic, and every coffee is traceable to the producer’s plot. Since August 2024 its Brazilian and Colombian coffees have crossed the Atlantic by sail with the importer Belco and the shipping company TOWT.

All the roasting happens in Île-de-France on Loring roasters of 7, 35 and 70 kg, a “carbon-free” process. On its finest coffees it roasts two profiles, one for espresso and one for filter, French press and AeroPress, and some lots carry a single “uniroast” for both. The range is sorted by SCA score, from 80+ to 88+, with blends, a decaf, kilo bags and the Légendes collection: tiny lots from intact or restored ecosystems, grown without flavour-altering inputs. Servell received the Outstanding Achievement Award at the European Coffee Symposium in Berlin in November 2024, and two of the house baristas, Pierre de Chantérac and Jordan Tachnakian, were Ibrik world champions in 2023 and 2024.

The shops are coffee stores as much as coffee shops: beans, espresso machines, grinders and brewing gear alongside the bar. Ten of them are in Paris, from the historic Blancs-Manteaux boutique in the Marais and its smaller sister Rambuteau to Saint-Honoré by the Louvre, Saint-Germain-des-Prés, the Eiffel Tower side of the 7th, Batignolles and Daguerre, on a pedestrian street of food shops in the 14th. Beyond Paris there are shops in Versailles, Lille (its first outside Île-de-France, opened in 2024), Rennes, Aix-en-Provence, a Brussels shop on the Grand Sablon opened in July 2025, and two in Seoul. The bars serve espresso, filter, latte and Ibrik, and the company offers barista training and a trade service.
