Margo’s is a plant-based bakery and coffee shop. Margo and Ayden were a husband-and-wife team working in product, fashion and sport photography when they went plant-based, and during lockdown Margo set out to make a plant-based croissant at home with no baking experience, learning French pastry from YouTube tutorials and baking books. They put their savings into the first bakery, which opened in May 2021. There are now two shops in Amsterdam: one on Bellamyplein in Oud-West, with seating, and a takeaway counter in the Jordaan.

Everything is plant-based. Each pastry goes through a three-day process based on traditional French methods, with Be Better plant-based butter, Wildfarmed regenerative flour and Xoco chocolate, and the focaccia changes every week with the season. Ceremonial matcha is served and sold by the tin. The interiors are by the Cyprus studio HUGA, with terracotta walls, terrazzo counters, steel tables by Intrigue Collection and a counter built by PEACK Design.

The house espresso is an exclusive blend of Brazil and Colombia made with the local roaster Fiveways, sold in 250g bags as well. A guest roaster rotates on espresso and filter. Sprout Coffee from Eindhoven is the current one. Fiveways roasts the house coffee Margo’s serves.
