DAK Coffee Roasters was founded in Amsterdam in 2019 by Veronique Lagarde and Louis-Philippe Boucher, two Canadians from Montreal who came to coffee from outside the industry. Their love of coffee started in Italy in 2014, in its espresso bar culture. DAK means rooftop in Dutch, and the team now has more than thirty people from sixteen countries.
The roastery sits in Amsterdam Noord, overlooking the IJ. It houses two Italian-built IMF roasters, a quality control lab and the packing and dispatch team, and it is closed to the public. The quality team cups every day and logs each batch, and every roast goes through destoning and colour sorting. DAK works with traceable coffees, returns to the same partners year after year and often visits origin to choose lots, and its coffees reach more than forty countries through wholesale partners. Each coffee gets a name before it reaches the shelf, such as Milky Cake or Golden Waffle. Rarer lots come in 125 g bags and the regular coffees in 200 g or 250 g, with 1 kg bags too.
The showroom opened in Oud-West in November 2024, after a first showroom inside the Noord roastery. It has a bar serving filter and espresso from the current menu, shelves with the full DAK collection and a private tasting room at the back. The tasting room runs open tastings at weekends, private sessions and seasonal workshops on water chemistry, fermentation and omakase-style cuppings, and the showroom hosts pop-ups and collaborations through the year.
